Biltong originated during the time when Dutch and Flemish settlers established themselves in the Cape in the 17th century. They adapted traditional European methods of preserving meat, including drying, curing, and seasoning, to local conditions. The warm, dry South African climate made air-drying especially effective. Ingredients such as coriander, pepper, and vinegar soon became key elements of the recipe.

The name “biltong” comes from Dutch/Afrikaans: “bil” (the hindquarter of the animal) and “tong” (strip). During long journeys, expeditions, and later during the Great Trek (around 1835–1840), biltong was an essential food because of its long shelf life. Today biltong is enjoyed worldwide, but its historical roots lie in traditional Dutch meat preservation techniques that proved highly effective in South Africa.

Biltong and Beef Jerky: The Difference

Biltong is often compared to beef jerky, as both are made from dried beef. However, the production process and resulting flavor differ significantly. Traditional South African biltong is made from thick strips of beef that are first marinated in vinegar, salt, and spices—particularly coriander and black pepper—before being slowly air-dried. This process keeps the meat tender, flavorful, and typically cut into thicker pieces.

Beef jerky, on the other hand, mainly originates from the United States. It is usually made from thinner slices of meat that are often marinated in a sweeter mixture, such as one containing sugar or soy sauce. The meat is then dried or lightly heated at relatively high temperatures. As a result, jerky tends to be sweeter, drier, and chewier, while biltong remains softer, more savory, and more aromatic.

Why Grass-Fed?

Grass-fed animals consume a natural diet and have the freedom to move as they need. They are also raised without chemical growth agents. As a result, their meat typically has superior nutritional value.

Grass-fed beef generally contains higher levels of conjugated linoleic acid (CLA), protein, and vitamins such as B2, E, and K2. It also provides more beta-carotene, the precursor of vitamin A, and higher amounts of omega-3 fatty acids. In addition, minerals such as zinc, iron, potassium, phosphorus, and sodium are often present in greater quantities.
